zesty shrimp and avocado cocktail

This is one of my favorite summertime recipes. It's cool, refreshing and delicious. Quite a crowd pleaser. These photos are from web sites Big Oven and Grabbing the Gusto.

Ingredients

  • 3 - large avocados, chopped
  • 1 1/3 - cucumbers, peeled, seeded and chopped
  • 1 - small red onion, chopped
  • 1 - rib celery, chopped
  • 1/2 bunch fresh cilantro, chopped
  • 2 pounds medium shrimp, peeled, de-veined and steamed
  • 6 cups spicy v-8 vegetable juice
  • 2 - limes, juiced
  • - tabasco sauce
  • - lime wedges to serve

How To Make zesty shrimp and avocado cocktail

  • Step 1
    Gently mix first six ingredients together in a large glass container.
  • Step 2
    Add the V-8 juice and lime juice. Stir gently until thoroughly combined. Cover tightly with plastic wrap and refrigerate for at least 1 hour.
  • Step 3
    Serve in chilled margarita glasses or other attractive glass containers.
  • Step 4
    Garnish each glass with a lime wedge and add extra Tabasco sauce as desired.
