Ingredients

  • 1 package rice noodles
  • 1 package rice wrappers
  • 1 bunch cilantro
  • 1 bunch mint
  • 1 - cucumber, julienned
  • 1 - carrot, julienned
  • 1/2 pound shrimp, boiled or sauteed

How To Make spring rolls

  • Step 1
    Peel and devein shrimp. Boil or saute. Cut in half lengthwise and set aside. Put noodles in a bowl of very hot water and let sit according to directions. Drain and set aside.
  • Step 2
    Pour a little water in a pie plate and add one rice wrapper at a time, just until beginning to soften. Lay on flat surface and add 3 pieces of shrimp in the center. Top with cucumber, carrot, mint, cilantro, and some of the noodles.
  • Step 3
    Gently pull lower half of wrapper over the filling. Fold two sides in toward the filling and continue rolling. Set aside and cover with damp cloth until ready to serve. Serve with your favorite peanut sauce.
