shrimp the shrimp spring rolls
This is another way I love to eat any kind seafood. I make this recipe this way or deep fried. This makes a great finger food. My brothers love this. I have many lots when ever they are home... :)

Ingredients
- 1 package thin rice noodles, uncooked
- 1/3 cup asian toasted sesame dressing
- 3 cups lettuce leaves, cut into thin strips
- 1/2 cup mint leaves, chopped
- 1/2 cup cilantro, fresh & chopped
- 4 - green onions, chopped
- 1 cup water, warm
- 12 - round sheets rice paper
- 1 pound shrimp, cleaned, cooked & cut lengthwise in half
- 3/4 cup peanuts, dry roasted
- 3/4 cup miracle whip dressing
- 2 tablespoons sriracha sauce, (hot chili sauce)
How To Make shrimp the shrimp spring rolls

Step 1Prepare rice noddles as directed on the package. Drain, rinse under cold water. Then place noodles in a large bowl & stir in the next 5 ingredients.

Step 2Then fill pie plate with warm water, sbmerge rice paper, 1 sheet at a time about 20to 30 seconds. Remove rice paper from the water,place on cutting board.

Step 3Place about 5 shrimp halves & 3/4 cup noodles mixture on rie paper. Fold in opposite side of rice paper, then roll up burrito-style. Repeat with remaining rice paper, shrimp & noodle mixture.

Step 4Then place rolls, sm side down, & place on platter. Serve with chopped peanuts & combined MIRACLE WHIP & chili sauce.

Step 5Special Tip: You amy use mayo.
