Ingredients
- 1/2 cup olive oil, light
- 4 teaspoons lemon juice, fresh
- 1/2 tablespoon salt and pepper
- 48 medium shrimp, peeled and deveined,tail left on.
- 48 - uncooked fresh sea scallops
- 48 medium fresh portabello mushrooms stems removed
- SPICY PIMIENTO SAUCE
- 1 cup mayonnaise
- 2 4oz jars sliced pimientos,drained
- 2 cloves med garlic minced
- 1 small onion,diced small
- 1 teaspoon red pepper flakes

Step 1pre-heat gril for med heat. Wile grill is heating. In a food processor add mayonnaise,garlic,onion,pimientos,and red pepper flakes.Blend on high untill smooth . Set aside. .In a bowl add lemon juice,olive oil, salt & pepper mix well

Step 2On the skewers thread shrimp,mushroom,and scallops.You well need 16. 14" metal skewers Fill all skewers, then brush with lemon mixture. Grill over med heat for 4-5 minutes turning and basting once.Shrimp will turn pink. And scallops will be opaque... serve with spicy pimiento sauce.

Step 3You can broil also.put food on a broiler pan. place 4-6 inches from heat for 4-5 minutes. Turning and basting once.
