sassy shrimp salad

This is my recipe for shrimp salad with something a little different. It's a little spicy, a little sweet; creamy and yet crunchy, kind of a yin yang thing. It's great to eat all by itself, or as a sandwich, on crackers for an appetizer, or to use for stuffed tomatoes.

Ingredients

  • 1/4 cup low fat mayonnaise (or regular mayo)
  • 1 teaspoon cocktail sauce
  • 1/4 to 1/2 teaspoon sriracha pepper sauce
  • 1 small pinch sea salt
  • 1 cup plain cooked shrimp, chopped & moisture blotted
  • 2 teaspoons sweet relish (see *note)
  • scant 1/4 cup chopped celery (about 1 medium-small stalk)
  • 1 medium romaine lettuce leaf, torn (optional)

How To Make sassy shrimp salad

  • Step 1
    In a medium-sized mixing bowl, combine mayonnaise, cocktail sauce, sriracha sauce and salt.
  • Step 2
    Add shrimp, relish or chopped pickles and celery; mix well. Cover and chill for 1/2 hr before serving.
  • Step 3
    Serve on bed of torn or shredded lettuce or inside tomatoes that have been hollowed for stuffing.
  • Step 4
    (*NOTE: You may use sweet pickle relish, chopped sweet pickles, chopped bread and butter pickles or green tomato relish, my personal favorite.)
  • Step 5
    Cover and refrigerate leftovers.
