- 1 cup cooked salmon, flaked (and drained, if canned)
- 3/4 cup cilantro leaves
- 1 tablespoon white onion, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon mayonnaise
- 1/2 teaspoon prepared mustard
- 24 - melba rounds or other type cracker
- - red pepper strip, black olive or a spring onion as a topper to make them more attractive

Step 1Place salmon, cilantro leaves and onion into a food processor. Mix at medium speed for 30 seconds. Add the lemon juice, mayo, and mustard. Mix at high spped for 1 minute or until the mixture is fairly smooth.

Step 2Slater each cracker with the spread and place on a serving platter. Serve immediately.
