You have to be a connaisseur of FRENCH Quiche to appreciate this one. This is the best version I ever made.

Ingredients

  • 1 slice deep dish pie shell
  • 4 - eggs
  • 2 cups half and half
  • 1/4 cup sherry
  • 2 cups mayonnaise
  • 2 cups jalsberg cheese
  • 1/4 cup flour
  • 1 cup crabmeat
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 teaspoon mace
  • 1/2 cup finely minced onions

How To Make quiche with a flair

  • Step 1
    Put onions and sherry in a small saucepan. Bring to boil over low heat and simmer 2 minutes. Remove from heat and set aside to cool.
  • Step 2
    Beat eggs, mayonnaise, half and half and flour together very gently. Fold in onions mixture, crab and spices.
  • Step 3
    Sprinkle cheese over the bottom of the prepared pie shell.
  • Step 4
    Pour eggs mixture into pie shell. Bake at 350 degrees for 35 to 45 minutes or until egg mixture sets. Let the quiche sit for about 10 minutes before slicing.
