To me nothing says the holidays like appetizers, we serve them, and bring them to holiday parties. This appetizer was born out of my way to use shrimp. We live here in Fl right on the ocean and have friends that shrimp, so I am always dreaming up ways to fix shrimp

Ingredients

  • 12 slices prosciutto, sliced paper thin
  • 12 large shrimp, peeled ,deveined, cooked
  • 12 slices melon, sliced thin
  • 12 teaspoons cream cheese
  • 1 cup mango, diced
  • 1/2 cup papaya, diced
  • 2 medium jalepenos, diced
  • 2 tablespoons fresh cilantro, diced
  • 1/2 cup sweet red peppers, diced
  • 6 tablespoons lime juice, divided
  • 1/2 cup red onion, diced

How To Make prosciutto wrapped shrimp

  • Step 1
    Marinate the shrimp in 3 tablespoons of lime juice while you make the tropical mango salsa.
  • Step 2
    In a bowl combine the mango, papaya, jalepenos, onions,cilantro, red peppers, and lime juice
  • Step 3
    Take one slice of prosciutto, place a slice of melon in the middle, put a shrimp on top of that, put a teaspoon of cream cheese on top of shrimp.
  • Step 4
    Wrap each end of prosciutto over filling, cover and refridgerate until ready to serve.
  • Step 5
    Serve the prosciutto wrapped shrimp with the mango salsa.
