Ingredients For pecan praline shrimp in rice

  • 1 lb
    large shrimp, peeled and deveined, without tail.
  • 1 Tbsp
    cajun seasoning blend
  • 1 stick
    butter
  • 1 c
    brown sugar
  • 1 c
    pecans, chopped
  • 1/2 c
    heavy cream
  • 2 c
    cooked and chilled sticky white rice
  • oil for frying

How To Make pecan praline shrimp in rice

  • 1
    In a bowl, sprinkle the shrimp with the Cajun seasoning blend and toss to coat. Set in the refrigerator.

    In a small heavy bottom saucepan, melt butter over medium-high heat. Add brown sugar and pecans and stir frequently until boiling and the sugar is completely melted.

    Remove from the heat and temperp add the cream very slowly to the butter and sugar mix.

    Return to the heat and bring to a boil. Boil for 2 minutes.

    Fold half (just half) of the praline mixture into the rice. Using 1/2 cup of rice, make a flat bottomed cupped rice patty. Fold and seal each shrimp into the rice patty to form a ball.

    Heat the oil for either a pan or deep fryer to 325 degrees. Fry each ball for 2 minutes per side.

    Serve with the remaining praline sauce as a dip or drizzle over the serving.
