pecan praline shrimp in rice

Ingredients
- 1 pound large shrimp, peeled and deveined, without tail.
- 1 tablespoon cajun seasoning blend
- 1 stick butter
- 1 cup brown sugar
- 1 cup pecans, chopped
- 1/2 cup heavy cream
- 2 cups cooked and chilled sticky white rice
- oil for frying
How To Make pecan praline shrimp in rice

Step 1In a bowl, sprinkle the shrimp with the Cajun seasoning blend and toss to coat. Set in the refrigerator.

Step 2In a small heavy bottom saucepan, melt butter over medium-high heat. Add brown sugar and pecans and stir frequently until boiling and the sugar is completely melted.

Step 3Remove from the heat and temperp add the cream very slowly to the butter and sugar mix.

Step 4Return to the heat and bring to a boil. Boil for 2 minutes.

Step 5Fold half (just half) of the praline mixture into the rice. Using 1/2 cup of rice, make a flat bottomed cupped rice patty. Fold and seal each shrimp into the rice patty to form a ball.

Step 6Heat the oil for either a pan or deep fryer to 325 degrees. Fry each ball for 2 minutes per side.

Step 7Serve with the remaining praline sauce as a dip or drizzle over the serving.
