Lime and Cilantro Shrimp
1 lb(large-26/30 count) cooked shrimp, peeled and deveined (tails on)
1/2 ccilantro leaves
2 clovegarlic, peeled and chopped
1 largelime, zest and juice
·salt and pepper, to taste
How to Make Lime and Cilantro Shrimp
- Shrimp should be cooled.
- Place all ingredients, EXCEPT SHRIMP, in a food processor and pulse until smooth.
- Place shrimp in a large zipper-type plastic bag and pour marinade over. Squeeze out air and seal bag. "Massage" the shrimp to distribute the marinade.
- Place in refrigerator for a few hours, until chilled. Place shrimp in serving bowl and drizzle some of the marinade over them. Serve chilled.
