sardine (herring) fillet appetizers
Open-faced sardine or herring sandwiches can be served as an appetizer or as lunch. My dad and I used to enjoy these as lunch. If you don't use the whole can, put the tin with the leftovers into a zip lock bag and refrigerate, so your whole fridge doesn't smell of fish!!!

Ingredients
- 12 slices firm rye bread
- 8 ounces whipped cream cheese
- 7-8 ounces sardine or herring fillets in tomato sauce, mustard sauce or oil
- 1 small red onion, separated into rings
- 1 tablespoon capers, drained
How To Make sardine (herring) fillet appetizers

Step 1Spread cream cheese on slices of rye bread (If you use cocktail rye, then probably use the whole loaf)

Step 2Open can of sardine/herring fillets, divide among all slices of bread. Use table knife to partially smoosh the fish down to cover the bread.

Step 3Lay an onion ring or two on each slice and sprinkle with a few capers each.
