greek stuffed tuna & pancetta campari tomatoes

Here is a quick & easy appetizer for your next cocktail party or anytime party. This is my Greek twist on a classic tuna stuffed tomato. I hope you like it. Cooking with Passion, sw :)

Ingredients

  • 10 ounces albacore tuna filet , drained
  • 3-4 tablespoons olive oil mayo-
  • - zest & juice of 1 lemon
  • 3 slices pancetta, cooked and crumbled
  • 2 tablespoons greek green olives, chopped
  • 2 tablespoons red onion, chopped
  • 1 tablespoon italian parsley, chopped
  • 1 teaspoon oregano, fresh
  • 2 teaspoons all purpose greek seasoning
  • 1 teaspoon red pepper flakes
  • 15-18 - campari tomatoes, tops off and deseeded

How To Make greek stuffed tuna & pancetta campari tomatoes

  • Step 1
    Combine all the ingredients in a mixing bowl. Fold and mix thoroughly. Stuff tomatoes. Enjoy!
