I am forever on a low carb diet;the only way I seem to lose weight. I developed this recipe when I was at the grocery store ogling the stuffed mushrooms at the meat counter.

Ingredients
- 2 - large portabello mushrooms
- 1/2 cup imitation crabmeat or real crabmeat, chopped
- 2 slices low carb bread made into bread crumbs with food processor
- 1/2 cup shredded cheddar cheese or jack cheese
- 1/4 cup small diced red pepper
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon minced garlic
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon parsley flakes, dried
- 1/2 cup mayo
- 1/4 cup shredded cheddar or jack cheese for topping
How To Make crab stuffed portabellos

Step 1Preheat oven to 350. Make breadcrumbs out of low carb bread. Clean and scrape portabello mushrooms.

Step 2In a bowl mix breadcrumbs, crabmeat, seasonings, cheese, and mayo. Mixture should be moist and well mixed. Add more mayo if necessary.

Step 3Put portabellos in small baking pan that is lightly greased. Fill portabellos with filling mixture. Top with extra cheese.

Step 4Bake at 350 degrees for approximately 35 minutes or until hot and bubbly. Cool slightly and serve. Recipe can be doubled for more servings.
