I am forever on a low carb diet;the only way I seem to lose weight. I developed this recipe when I was at the grocery store ogling the stuffed mushrooms at the meat counter.

Ingredients

  • 2 - large portabello mushrooms
  • 1/2 cup imitation crabmeat or real crabmeat, chopped
  • 2 slices low carb bread made into bread crumbs with food processor
  • 1/2 cup shredded cheddar cheese or jack cheese
  • 1/4 cup small diced red pepper
  • 1/2 teaspoon salt and pepper
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon parsley flakes, dried
  • 1/2 cup mayo
  • 1/4 cup shredded cheddar or jack cheese for topping

How To Make crab stuffed portabellos

  • Step 1
    Preheat oven to 350. Make breadcrumbs out of low carb bread. Clean and scrape portabello mushrooms.
  • Step 2
    In a bowl mix breadcrumbs, crabmeat, seasonings, cheese, and mayo. Mixture should be moist and well mixed. Add more mayo if necessary.
  • Step 3
    Put portabellos in small baking pan that is lightly greased. Fill portabellos with filling mixture. Top with extra cheese.
  • Step 4
    Bake at 350 degrees for approximately 35 minutes or until hot and bubbly. Cool slightly and serve. Recipe can be doubled for more servings.
