clam stuffed mushrooms

These are a real hit at our family gatherings and we make them with clams rather than crab meat for those who are allergic to shellfish

Ingredients

  • 3 packages small white mushrooms
  • 1 clove garlic
  • 1 cup grated parmesan
  • 4 1/2 ounces cream cheese
  • 4 1/2 tablespoons canned minced clams, drained
  • 3 tablespoons dry bread crumbs
  • 1 1/2 teaspoons italian seasoning
  • 3 tablespoons fresh chopped parsley
  • 1/2 cup mozzarella cheese

How To Make clam stuffed mushrooms

  • Step 1
    Preheat oven to 350 degrees F
  • Step 2
    Clean mushrooms, remove stems and set aside. Set mushrooms on paper towels to drain
  • Step 3
    Chop stems and place in a mixing bowl
  • Step 4
    Add creamed cheese, garlic, grated Parmesan cheese, clams, bread crumbs, seasoning and half the parsley to stems and mix well.
  • Step 5
    Pour 4 tablespoons of water into a baking dish and place filled mushrooms in dish in a single layer
  • Step 6
    Sprinkle with mozzarella cheese and half the parsley. Bake at 350 for 30 minutes. Remove from oven and sprinkle with the remainder of the parsley. Allow to cool before serving
