Such a pretty evening yesterday that I decided to stay up and have a putter in the kitchen. Actually, I accomplished two things: I finished the parquet flooring for my bookshelf diorama and made this recipe. Win/Win. This is not so much about what you put on the chicken, but how you can make crispy oven-baked wings with an absolute minimum of effort. So, you ready… Let’s get into the kitchen.

  • PLAN/PURCHASE
  • 1 lb
    chicken wings, split, tips removed, about a dozen
  • 1 Tbsp
    sweet butter, unsalted, melted
  • 1 Tbsp
    olive oil, extra virgin variety, or sesame oil
  • ADDITIONAL SPICE SUGGESTIONS
  • salt, kosher variety
  • black or white pepper, freshly ground
  • garlic powder
  • paprika, mild, hot, or smoked
  • cayenne pepper
  • whatever floats your boat

    This recipe works best when you have a baking sheet fitted with a wire rack. This helps to crisp the wings top-and-bottom, without having to turn them over.

    Gather your ingredients (mise en place).

    Place a rack in the upper-middle position and preheat the oven to 400f/205c.

    Place a piece of parchment paper into a rimmed baking sheet, and then add a wire rack (if you have one).

    Add the melted butter, oil, and any other spices, to a bowl and toss the wings until evenly coated.

    Lay them out on the baking sheet, being sure to give them a bit of space.

    THE CRISPING TECHNIQUE Add the wings to the oven and bake for 30 minutes. If you are not using a rack, turn them over halfway through the baking process. Turn the heat down to about 170f/75c and leave them in the oven for up to an hour. If you are not using a rack, turn them over halfway through the baking process. You will know they are ready when the skins begin to turn a crispy golden brown. The low temperature helps to dry out and crisp the skin, while preventing the meat inside from overcooking.
