sauce essentials: homemade buffalo sauce
I have been working like crazy on Thanksgiving, so tonight I have decided to be naughty, and I am making a batch of yummy chicken wings. I also came up with this new buffalo sauce recipe that is so good. The one thing to remember is that the heat can be controlled by adjusting the pepper, hot sauce, and cayenne that goes into the recipe. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 5 tablespoons hot sauce, i prefer frank’s
- 4 tablespoons sweet butter, unsalted
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon celery salt
- 1/8 teaspoon worcestershire sauce
- 1/8 teaspoon cayenne pepper, or to taste
- 1/8 teaspoon white pepper, freshly ground
- 1 pinch garlic powder

Step 2Gather your Ingredients (mise en place).

Step 3Add all the ingredients to a small saucepan, over medium heat.

Step 4As the mixture begins to heat, and the butter melts, use a whisk to thoroughly combine all the ingredients.

Step 5Allow to lightly simmer for five minutes.

Step 6Chef’s Note: Tabasco sauce in not hot sauce… I repeat Tabasco sauce is NOT a hot sauce. If you use 5 tablespoons of Tabasco sauce in this recipe, the top of your head will explode… BOOM!!! In my opinion, the only hot sauce to use is Franks.”

Step 7Use immediately, or store in a tightly-sealed container until needed.
