poultry essentials: potato chip tenders
The other night I pulled an all-nighter, working on an Asian dipping sauce. But, testing it required something to dip into it. So, I came up with this new recipe for potato-chip crusted chicken tenders. Good stuff. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- EGG MIXTURE
- 2 large eggs
- 3 tablespoons heavy cream
- 1 tablespoon hot sauce, i prefer frank’s
- THE CHICKEN
- 1 pound chicken breasts, boneless, skinless, cut into strips
- THE SPICE MIX
- 8 ounces potato chips, more on this later
- 2 tablespoons flour, all-purpose variety
- 1 tablespoon dehydrated onions, crushed to a powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika, sweet or hot, your choice
- 1 tablespoon salt, kosher variety, fine grind
- white or black pepper, freshly ground, to taste
- OPTIONAL ITEMS
- cayenne pepper… for kick

Step 1PREP/PREPARE

Step 2To achieve the best results, you will want a baking sheet fitted with a wire rack. This will help to crisp the chicken on both sides at the same time. If you do not have a wire rack, you should carefully flip the chicken strips over, halfway through baking.

Step 3I am cutting up chicken breasts into strips; however, you could actually use chicken tenders.

Step 4The potato chips you choose will impact the flavor of these tenders. My personal favorite is vinegar-and-sea-salt; but choose whatever flavor you like the most.

Step 6Gather your ingredients (mise en place).

Step 7THE EGG MIXTURE

Step 8Add the egg mixture ingredients to a large bowl.

Step 9Whisk them together, then cut the chicken into strips, and add them to the mixture.

Step 10Cover and place into the fridge for 2 – 3 hours.

Step 11THE SPICE MIX

Step 12Crush up the potato chips (I used a food processor; however, you could just as easily do it with your hands). You do not want dust; you want little bits of chips.

Step 13Combine with the remaining ingredients, then, one-at-a-time, add the chicken strips and thoroughly coat with the mixture.

Step 14Gently add them to a rimmed baking sheet fitted with a wire rack and allow to rest for about 15 – 20 minutes.

Step 15While the tenders are resting, place a rack in the middle position, and preheat the oven to 400f (205c).

Step 16Bake until the chicken is cooked through and the crust is golden brown, about 18 – 22 minutes.

Step 18Serve by themselves or with your favorite dipping sauce. Enjoy.
