Party Essentials: Baked Cajun Chicken Poppers

These are an easy/peasy way to use those chicken breasts you have lying about your fridge or freezer. The ingredients are fairly straightforward, and the results are yummy.

They would be an excellent addition to your snack table on game day.

And to sweeten the deal, I've recommended some brilliant sauces.

So, you ready… let’s get into the kitchen

  • 1 lb
    chicken, freshly ground
  • 2 Tbsp
    celery, minced
  • 2 Tbsp
    yellow onion, minced
  • 1 clove
    garlic, minced
  • 2 Tbsp
    bread crumbs, finely ground
  • 1/2 tsp
    white pepper, freshly ground
  • 1/2 tsp
    mustard powder
  • 1/2 tsp
    cajun seasoning, i prefer tony chachere’s
  • 1/2 tsp
    hot sauce, i prefer frank’s
  • 1 large
    egg, just the white

  • 1/2 c
    parmesan cheese, finely grated
  • 1/2 c
    breadcrumbs, finely ground

    sauces, for dipping

How to Make Party Essentials: Baked Cajun Chicken Poppers


  3. Gather your ingredients (mise en place).
  4. Chef’s Note: If you don’t want to grind your own chicken, then get a pound of pre-ground at the market.
  5. Chef’s Tip: The easiest way to mince the veggies, is to place them all in a mini food prep and give it a few pulses until they are nicely minced.
  6. In a large bowl add all the ingredients for the chicken bites, and gently combine.
  8. Gather your ingredients (mise en place).
  9. Combine the parmesan cheese and breadcrumbs in a bowl or tray.
  10. Chef’s Tip: I like to add a bit of cajun seasoning to the mixture… just to give them a little extra kick.
  11. Place a rack in the middle position, and preheat the oven to 360f (180c).
  12. Take about 1.5 ounces (40g) of the chicken mixture, and form into a ball.
  13. Chef’s Note: You should have enough to make about 12 - 14 balls.
  14. Roll in the bread crumb/parmesan mixture and thoroughly coat.
  15. Place on a parchment-lined baking sheet, and repeat for the other chicken balls.
  16. Chef's Tip: If you have a rack for your baking sheet, use it.
  17. Add the tray to the oven, and bake until the chicken is cooked through, and they begin to turn a nice golden brown, about 20 – 25 minutes.
