These are an easy/peasy way to use those chicken breasts you have lying about your fridge or freezer. The ingredients are fairly straightforward, and the results are yummy. They would be an excellent addition to your snack table on game day. And to sweeten the deal, I've recommended some brilliant sauces. So, you ready… let’s get into the kitchen

Ingredients

  • PLAN/PURCHASE
  • CHICKEN BITES
  • 1 pound chicken, freshly ground
  • 2 tablespoons celery, minced
  • 2 tablespoons yellow onion, minced
  • 1 clove garlic, minced
  • 2 tablespoons bread crumbs, finely ground
  • 1/2 teaspoon white pepper, freshly ground
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon cajun seasoning, i prefer tony chachere’s
  • 1/2 teaspoon hot sauce, i prefer frank’s
  • 1 large egg, just the white
  • THE COATING
  • 1/2 cup parmesan cheese, finely grated
  • 1/2 cup breadcrumbs, finely ground
  • ADDITIONAL ITEMS
  • - sauces, for dipping

  • Step 3
    Gather your ingredients (mise en place).
  • Step 4
    Chef’s Note: If you don’t want to grind your own chicken, then get a pound of pre-ground at the market.
  • Step 5
    Chef’s Tip: The easiest way to mince the veggies, is to place them all in a mini food prep and give it a few pulses until they are nicely minced.

    In a large bowl add all the ingredients for the chicken bites, and gently combine.

    THE COATING

    Gather your ingredients (mise en place).
  • Step 9
    Combine the parmesan cheese and breadcrumbs in a bowl or tray.

    Chef’s Tip: I like to add a bit of cajun seasoning to the mixture… just to give them a little extra kick.

    Place a rack in the middle position, and preheat the oven to 360f (180c).
  • Step 12
    Take about 1.5 ounces (40g) of the chicken mixture, and form into a ball.
  • Step 13
    Chef’s Note: You should have enough to make about 12 - 14 balls.

    Roll in the bread crumb/parmesan mixture and thoroughly coat.
  • Step 15
    Place on a parchment-lined baking sheet, and repeat for the other chicken balls.

    Chef's Tip: If you have a rack for your baking sheet, use it.
  • Step 17
    Add the tray to the oven, and bake until the chicken is cooked through, and they begin to turn a nice golden brown, about 20 – 25 minutes.
