- 12 chicken wings, with wing tips separated and saved for stock or discarded
- 1/2 cup apple-cider vinegar
- 1/2 cup chicken stock, not broth
- 2 teaspoons salt, kosher variety
- 1 tablespoon lemon/pepper seasoning

Step 1PREP/PREPARE

Step 2Gather your ingredients (mise en place).

Step 3Whisk together the vinegar, chicken stock, and salt, place into the insert of your pressure cooker/instant pot, and add the wings.

Step 4Set the pressure cooker to high, with a time of 8 minutes.

Step 5After the 8 minutes, quick release the steam, remove the wings, place on a paper towel, and allow to rest for 20 minutes.

Step 6Chef’s Note: Reserve the cooking liquid.

Step 7Place a rack in the middle position, and preheat the oven to 400f (205c).

Step 8After the wings have rested, toss in a bowl with the lemon/pepper seasoning.

Step 9On a parchment-lined baking sheet, fitted with a wire rack, place the chicken wings.

Step 10Put into the preheated oven until golden brown, about 20 minutes.

Step 11Take the wings, and toss with about 1 tablespoon of the cooking liquid.

Step 13Serve while nice and hot with your favorite dipping sauce. Enjoy.
