For best results, buy the best quality dates you can find. Sweet, plump dates with crunchy almonds or creamy cheese. You decide between the lovely flavors and textures: salty, sweet, smoky, tart, soft, tender, crispy and crunchy. I like both versions of these dates, so I usually make them both ways, it's the best of both worlds. All you have to do is decide on the type of cheese you want to use; goat, blue or the wonderful manchego cheese. Surprise your guests; make a few with the different types of cheese and of course make some with the nuts.

Ingredients
- 24 large dried, pitted dates
- 12 marcona almonds
- 8 slices bacon, good quality, cut into thirds
- 2 ounces manchego cheese, diced, 12 pieces
- 1 garnish, lime, cut into wedges,
- 24 toothpicks
How To Make wrapped dates

Step 1Preheat oven to 400 degrees F.

Step 2Line a cookie sheet with parchment paper and set a side until needed.

Step 3Follow the same instructions for both types of wrapped dates. Stuff a piece of cheese OR an almond into each date.

Step 4Next wrap the date with a piece of the bacon and use a toothpick to secure it.

Step 5Then put the dates on your cookie sheet, seam side down. Don't crowd the pan, leave at least an inch between pieces.

Step 6Put in preheated oven and bake for 5 minutes, turn and bake for 5 more minutes or until your desired crispness is achieved.

Step 7Drain on paper towels and enjoy.
