tomato basil bruschetta

I am a stay at home mom with a home based candle making business. After taking my son to school I get home and get busy. Often times I forget to stop working and eat. This is something I make once a week and keep in the fridge when I can take a few mins and eat something. Works great as an appetizer also.

Ingredients

  • 1 - french baguette, cut on bias approx 16 slices
  • 4 - ripe tomatoes diced
  • 1/2 cup basil chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 - clove garlic, minced
  • 1/2 teaspoon coarse or sea salt
  • 1/8 teaspoon black pepper

How To Make tomato basil bruschetta

  • Step 1
    Preheat the oven to 375 degrees F. Dice your tomatoes and place in a bowl, mix in your chopped basil, garlic, salt, pepper, olive oil and balsamic vinegar and set aside. Slice your baguette into about 16 slices (or however many it yields) and place on a baking pan to bake for about 10 minutes.
  • Step 2
    Feel free to drizzle a bit of olive oil on the bread before you bake it, but that will of course add extra calories. Spoon your bruschetta mixture onto your baguette slices while your bread is warm and enjoy! Feel free to add more olive oil on top of mixture if you like olive oil. Store your excess tomato and basil mixture in a airtight container in the fridge, tastes amazing over grilled chicken!
