sylvia's field peas with snaps (drained, rinsed, and snaps removed)
1 can(s)
black eyed peas, drained and rinsed
1 can(s)
shoepeg white corn, drained
1 c
2 Tbsp
fresh basil, chopped
2 bunch
scallions-sliced thin
2-3 clove
garlic, minced


1 Tbsp
tabasco sauce
1/2 Tbsp
black pepper
1/2 Tbsp
dry mustard
1/2 c
olive oil
1/4 c
red wine vinegar

How to Make Texas Cavier


  • 1Combine peas, corn, cilantro, basil, scallions and garlic in a bowl.
  • 2In a separate bowl, mix dressing ingredients then pour over pea mixture and stir. Refrigerate until ready to serve.
  • 3Best made 1-2 days ahead of time to marinate.
