Ingredients
- 1 can sylvia's field peas with snaps (drained, rinsed, and snaps removed)
- 1 can black eyed peas, drained and rinsed
- 1 can shoepeg white corn, drained
- 1 cup cilantro
- 2 tablespoons fresh basil, chopped
- 2 bunches scallions-sliced thin
- 2-3 cloves garlic, minced
- DRESSING
- 1 tablespoon tabasco sauce
- 1/2 tablespoon black pepper
- 1/2 tablespoon dry mustard
- 1/2 cup olive oil
- 1/4 cup red wine vinegar

Step 1Combine peas, corn, cilantro, basil, scallions and garlic in a bowl.

Step 2In a separate bowl, mix dressing ingredients then pour over pea mixture and stir. Refrigerate until ready to serve.

Step 3Best made 1-2 days ahead of time to marinate.
