This is a recipe given to me by a friend, Janet Z. People go crazy for this. It's addictive.

Ingredients

  • 1 can sylvia's field peas with snaps (drained, rinsed, and snaps removed)
  • 1 can black eyed peas, drained and rinsed
  • 1 can shoepeg white corn, drained
  • 1 cup cilantro
  • 2 tablespoons fresh basil, chopped
  • 2 bunches scallions-sliced thin
  • 2-3 cloves garlic, minced
  • DRESSING
  • 1 tablespoon tabasco sauce
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon dry mustard
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar

How To Make texas cavier

  • Step 1
    Combine peas, corn, cilantro, basil, scallions and garlic in a bowl.
  • Step 2
    In a separate bowl, mix dressing ingredients then pour over pea mixture and stir. Refrigerate until ready to serve.
  • Step 3
    Best made 1-2 days ahead of time to marinate.
