Ingredients
- 1 can (15 oz) white corn
- 1 can (15 oz) yellow corn
- 1 can (15 oz) black beans
- 1 can (15 oz) black eyed peas
- 1 can ro-tel diced tomatoes with chilies or kick it up a notch using the ro-tel tomatoes with habaneros
- 1 cup diced cucumbers
- 1/2 cup sliced scallions
- DRESSING
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon diced garlic
- 2 tablespoons dried parsley
- 1 teaspoon sugar
- 1/4 teaspoon dry mustard
How To Make fiesta corn

Step 1Drain and rinse corn, beans and peas. Mix all ingredients in large bowl.

Step 2In a small bowl whisk together all dressing ingredients. Add dressing to vegetables, stir, cover and refrigerate. Serve as a salsa with tortilla chips. Can also be eaten as a side dish.
