refreshing healthy salsa with a homemade dressing. Great flavor!

Ingredients

  • 1 can (15 oz) white corn
  • 1 can (15 oz) yellow corn
  • 1 can (15 oz) black beans
  • 1 can (15 oz) black eyed peas
  • 1 can ro-tel diced tomatoes with chilies or kick it up a notch using the ro-tel tomatoes with habaneros
  • 1 cup diced cucumbers
  • 1/2 cup sliced scallions
  • DRESSING
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon diced garlic
  • 2 tablespoons dried parsley
  • 1 teaspoon sugar
  • 1/4 teaspoon dry mustard

How To Make fiesta corn

  • Step 1
    Drain and rinse corn, beans and peas. Mix all ingredients in large bowl.
  • Step 2
    In a small bowl whisk together all dressing ingredients. Add dressing to vegetables, stir, cover and refrigerate. Serve as a salsa with tortilla chips. Can also be eaten as a side dish.
