    (15 oz) white corn
  • 1 can(s)
    (15 oz) yellow corn
  • 1 can(s)
    (15 oz) black beans
  • 1 can(s)
    (15 oz) black eyed peas
  • 1 can(s)
    ro-tel diced tomatoes with chilies or kick it up a notch using the ro-tel tomatoes with habaneros
  • 1 c
    diced cucumbers
  • 1/2 c
    sliced scallions
  • DRESSING

  • 1/3 c
    olive oil
  • 2 Tbsp
    red wine vinegar
  • 1/2 tsp
    diced garlic
  • 2 Tbsp
    dried parsley
  • 1 tsp
    sugar
  • 1/4 tsp
    dry mustard

How to Make Fiesta Corn

Step-by-Step

  1. Drain and rinse corn, beans and peas. Mix all ingredients in large bowl.
  2. In a small bowl whisk together all dressing ingredients. Add dressing to vegetables, stir, cover and refrigerate. Serve as a salsa with tortilla chips. Can also be eaten as a side dish.
