This is my mom's recipe for stuffed eggs and it was always a hit. I had one teacher in middle school who would always ask me to bring these to parties because she loved them so much. They are so simple to make.

Ingredients For elaine's stuffed eggs

  • 1
    dozen large eggs
  • 1
    jar of blue plate sandwich spread
  • 1 Tbsp
    horseradish
  • salt and pepper

How To Make elaine's stuffed eggs

  • 1
    Hard boil eggs. Remove from shell, cut in half, remove yolk and place in a bowl.

    Mash yolks with fork. Add sandwich spread until the mixture becomes wet like a paste. Add horseradish for a little kick.

    Spoon mixture in to egg white halves.
  • 4
    You can top with a slice of green olive if you like.
