caramelized onion tarts

These are great and are wonderful for a get together over the Christmas season as they can be made ahead and reheated or serve at room temperature!!

Ingredients

  • 1/4 cup olive oil
  • 2 large spanish onions, sliced...regular onions are ok too
  • 1/2 teaspoon salt
  • FILLING
  • 1 large egg
  • 1 cup whipping cream
  • 1/3 cup coarsely chopped black olives
  • 1 teaspoon herbes de provence
  • 2 tablespoons balsamic vinegar
  • 1/2 cup shredded percorino romano cheese
  • - salt and freshly ground black pepper
  • PASTRY
  • 3/4 cup butter,,cut into chunks
  • 3/4 cup cream cheese
  • 1/2 teaspoon salt
  • 2 cups a p flour

How To Make caramelized onion tarts

  • Step 1
    Prepare your favorite pie crust or use the above. Combine all ingredients for pastry into a food processor and pulse to combine.Knead on floured board and roll into ball ...chill for one hour.Roll out and cut into 3 inch circles and fit into mini -muffin pan. Set aside.
  • Step 2
    Heat olive oil in a large skillet over medium heat. Add onions, sprinkle with salt and cook stirring occasionally until deep golden brown. Set aside.
  • Step 3
    Whisk together the whipping cream and egg. Season with s & p. Set aside. Combine caramelized onions, olives, herbs, balsamic vinegar and cheese in a bowl. Divide the onion mixture between tart shells and pour a scant tablespoon of cream mixture over top. bake at 375 for for 14 - 18 minutes until golden and baked through.So yummy!!
