This is only a two day posting for Lauren's Latest! I couldn't help myself, it honestly looks so delicious and sounds equally as wonderful! Remember Next week is "SUPER BOWL' time and this will fit right into your menu, I really know it will! That is why she posted.

Ingredients

  • 4 slices hickory smoked bacon
  • 2 - avocadoes
  • 1/2 - lime, juiced
  • 1/2 clove garlic, large, grated
  • - salt & pepper to taste
  • 2 tablespoons cilantro, chopped
  • 1/4 cup tomato, diced
  • 2 1/2 tablespoons crumbled blue cheese + more for garnish
  • - hot sauce, to taste

How To Make buffalo bacon blue cheese guacamole

  • Step 1
    Start by cooking bacon in skillet until edges are crispy. Transfer to paper towel lined plate. Chop into bite sized pieces and set aside.
  • Step 2
    Cut open avocados and scoop into large bowl. Mash together with lime juice, garlic, salt and pepper until chunky. Stir in cilantro, tomato, blue cheese, bacon and hot sauce. Stir until combined. Spoon into serving bowl and top with more blue cheese, hot sauce and cilantro. Serve as desired.
  • Step 3
    *Refrigerate until serve plus any leftovers.
