A friend from Petaluma, CA shared this recipe with me. She is one of the best home cooks I know!

Ingredients

  • 1 - baguette
  • 2 cloves garlic, minced
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 1/3 cups roma tomatoes, diced
  • 1/3 cup green onions, sliced (green and white parts)
  • - basil, fresh, diced (to taste)
  • 1/8 teaspoon black pepper
  • 1/2 cup parmesan cheese (grated or shredded)

How To Make bruschette

  • Step 1
    In a small bowl, stir together tomatoes, green onions, basil, olive oil, garlic, and pepper. Cover and chill.
  • Step 2
    For the toast, cut baguette into 1/2 inch slices. Brush both sides lightly with olive oil. Place on an ungreased baking sheet and bake at 425F for about 5 minutes or until desired crispness and golden brown color is achieved. BE SURE TO TURN ONCE.
  • Step 3
    Top toast with tomato mixture and sprinkle with Parmesan cheese. Return to 425F oven for 2-3 minutes or until cheese starts to melt and topping is heated through. Enjoy!
