My family loves this recipe. I get compliments all the time when I bring this to events. I am not a big fan of cilantro so I use parsley but you can always substitute the cilantro for the parsley. Super fast and super easy to make...Enjoy!

2 Tbsp
olive oil, extra virgin
2 Tbsp
lime juice
2 Tbsp
lemon juice

1/4 tsp
black pepper
1/4 tsp

How to Make Black Bean and Corn Texas Caviar


  • 1Chop the tomatoes, green pepper and onion, place in a medium sized bowl.
  • 2Add corn, beans, olive oil, lemon and lime juice, parsley, salt and pepper. Stir all ingredients until they are mixed.
  • 3Refrigerate for at least 1 hour before serving. Note: this gets better as it sits, so the next day it may taste even better!
