My family loves this recipe. I get compliments all the time when I bring this to events. I am not a big fan of cilantro so I use parsley but you can always substitute the cilantro for the parsley. Super fast and super easy to make...Enjoy!

Ingredients
- 1/2 - green pepper, chopped
- 1/2 - red onion, chopped
- 3 - tomatoes, chopped
- 1 can black beans, drained
- 1 can corn, drained
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons lime juice
- 2 tablespoons lemon juice
- 2 tablespoons parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
How To Make black bean and corn texas caviar

Step 1Chop the tomatoes, green pepper and onion, place in a medium sized bowl.

Step 2Add corn, beans, olive oil, lemon and lime juice, parsley, salt and pepper. Stir all ingredients until they are mixed.

Step 3Refrigerate for at least 1 hour before serving. Note: this gets better as it sits, so the next day it may taste even better!
