quick puff pastry pinwheels
This is an old family favourite that I am posting for my sister in law. It's a quick and easy-to-make appetizer that never disappoints, and it is very easy to vary. The finished result should look like a puffy Palmier cookie. Bake for 15 to 20 minutes. Please make sure to check at the 15-minute mark, as not all ovens bake the same. The pinwheel should be puffy and golden brown when done.

Ingredients
- 2 sheets frozen puff pastry
- 2 - 3 tablespoons mustard (Russian honey mustard or coarse Dijon), your choice
- 1/2 cup freshly shredded cheese (Parmigiano reggiano or pecorino Romano)
- 6 - 8 slices good quality prosciutto, thinly sliced
- 1 small egg
- 2 teaspoons water
How To Make quick puff pastry pinwheels

Step 1Defrost the puff pastry 30 - 40 minutes before you start assembling this treat.

Step 2Preheat oven to 400 degrees F. Place a piece of parchment paper on the bottom of a cookie sheet or pan you are going to use.

Step 3Lay out the puff pastry on a lightly floured board. Brush the top of the puff pastry with mustard. Use sparingly.

Step 4Sprinkle the Parmesan or pecorino cheese on top of the mustard. Both cheeses work well in this recipe. A combination of the two cheeses is also very tasty.

Step 5Layer the prosciutto slices on top of the cheese and mustard.

Step 6Tightly roll the shorter side of the dough in towards the middle, attempting to make it as snug as possible. Now roll the other side in towards the middle, pressing them lightly together.

Step 7Put the dough onto a parchment-lined pan and, using a sharp knife, cut into 1-inch slices. Place the cut side down on the cookie sheet. Whisk together the egg and water to make an egg wash.

Step 8Brush each one lightly with egg wash to ensure the top of each pinwheel is golden brown when baked.

Step 9Bake for 15 - 20 minutes until golden brown. Remove from pan and enjoy.
