pickled bologna

This was given to my by my good friend Dana who works here as a volunteer at the park. She brought me in some a short while ago and it was so good, I just had to have the recipe. I don't have a pict, but will take one next time I make this.

Ingredients

  • 1 medium bologna ring, get a good quality one
  • 1 cup vinegar, white is ok
  • 2 cups water
  • 2 tablespoons pickling spice your own, or use this combo below
  • - pickling spice combo:
  • 2 medium bay leaves
  • 1 teaspoon peppercorns
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon minced garlic
  • 1/4 teaspoon crushed red pepper

How To Make pickled bologna

  • Step 1
    Bring the vinegar,water, and pickling spice to a boil, boil for 5 min.
  • Step 2
    Let cool, then pour over bologna ring.
  • Step 3
    Refrigerate for 5 days before devouring.
  • Step 4
    Serve with crackers, or mini cocktail slices of rye or pumpernickle bread and of course grainey mustard.
