pickled bologna
This was given to my by my good friend Dana who works here as a volunteer at the park. She brought me in some a short while ago and it was so good, I just had to have the recipe. I don't have a pict, but will take one next time I make this.

Ingredients
- 1 medium bologna ring, get a good quality one
- 1 cup vinegar, white is ok
- 2 cups water
- 2 tablespoons pickling spice your own, or use this combo below
- - pickling spice combo:
- 2 medium bay leaves
- 1 teaspoon peppercorns
- 1/2 teaspoon mustard seeds
- 1 teaspoon minced garlic
- 1/4 teaspoon crushed red pepper
How To Make pickled bologna

Step 1Bring the vinegar,water, and pickling spice to a boil, boil for 5 min.

Step 2Let cool, then pour over bologna ring.

Step 3Refrigerate for 5 days before devouring.

Step 4Serve with crackers, or mini cocktail slices of rye or pumpernickle bread and of course grainey mustard.
