beef - pho rolls
I love these delicious fresh, flat rice noodle rolls that can be filled with a wonderful selection of goodies: like meat or seafood, vegetables, eggs, fresh greens and herbs. Serve the rolls with a nice, nuoc cham dipping sauce, a sweet and sour dipping sauce, or a spicy fish sauce.

Ingredients
- 2 tbsp vegetable oil, (1/2 tbsp + 1 1/2 tbsp)
- 200 gr beef fillet, thinly sliced - 1 1/2 " pieces,
- 1 tsp salt & 1/2 tsp pepper
- 2 cloves garlic, finely chopped
- 1/2 tsp ginger, finely chopped
- 1/2 onion, peeled, thinly julienned
- 1 carrot, peeled, thinly julienned
- 1 cucumber, peeled, thinly julienned, seeds removed
- 1 head lettuce, small, separate leaves, wash & dry
- 1 1/2 cup - mixed herbs, fresh ,leaves only, mint, basil, cilantro, oregano, vietnamese balm
- 1/4 cup peanuts, coarsely chopped
- 400 gr flat rice noodle sheets, fresh
- 2 tbsp shallots, fried (optional)
- your favorite dipping sauce
How To Make beef - pho rolls

Step 1In a small bowl add the sliced beef, 1/2 tbsp oil, salt, pepper, ginger and garlic, mix well and set aside until needed.

Step 2Put a wok or a pan on medium heat and add 1 - 1 1/2 tbsp oil. Fry in small batches until all the meat is done. When the oil is hot, add the beef and stir fry for 1 minute per side until the meat is browned. Remove from heat and set aside until needed.

Step 3Place your prepared vegetables and choice of herbs on a plate, keep them separated for easier accessibility, and set aside until needed.

Step 4ASSEMBLING: Now you are ready to roll. Place one flat rice noodle sheet on a chopping board or on a large plate, with the shorter end at the bottom.

Step 5At the base of the noodle sheet add a lettuce leaf, herbs, peanuts, beef, slices of onion, carrot and cucumber.

Step 6Roll up towards the top making a nice tight roll; you don't want the filling to fall out. Repeat until all ingredients have been used.

Step 7Place the finished rolls on a plate, sprinkle with fried shallots and serve with your favorite dipping sauce.
