quick pickled peaches
These are great served with grilled chicken or pork. Also yummy on top of pound cake. Look for peaches that are still firm....they will soften as they pickle. Using over ripe peaches means they will be mushy. Can also be served on a summer appetizer tray.

Ingredients
- 1 1/2 cups cider vinegar
- 1 1/2 cups water
- 1 cup sugar
- 1 tablespoon kosher salt
- 1 tablespoon crushed red pepper
- 2 teaspoons whole black peppercorns
- 6 - whole cloves
- 1 - 2-inch cinnamon stick, broken into small pieces
- 4 large fresh peaches, slightly firm, peeled
How To Make quick pickled peaches

Step 1Combine the first 8 ingredients in a large saucepan; bring to a boil. Cook for 2 minutes, stirring until the sugar dissolves.

Step 2Remove from the heat and let stand for 10 minutes.

Step 3Cut each peach into 12 wedges. Add the peaches to the vinegar mixture; let stand 20 minutes. Remove the peaches with a slotted spoon.
