This salsa is especially good served over grilled or seared seafood. It can be used with any dish, however, for a different salsa taste.

Ingredients

  • 4 to 6 medium peaches, ripe but firm
  • 1 medium mango, ripe but firm
  • 1 medium red onion
  • 1 medium white onion
  • 1/2 bunch fresh cilantro
  • 1 to 2 medium serrano or jalapeno chile peppers
  • 2 medium garlic cloves
  • 1 teaspoon sea salt
  • 2 tablespoons honey
  • 2 tablespoons lemon or lime juice

How To Make peachy keen salsa (sallye)

  • Step 1
    Peel and core peaches and mango Cut into bite sized pieces Place in medium sized mixing bowl Set aside
  • Step 2
    Place honey, salt, and lemon/lime juice in measuring cup or fairly deep small bowl Whisk briskly until well blended Set aside
  • Step 3
    Peel red and white onions and cut into quarters Peel garlic cloves Wash cilantro and cut stems off retaining only the leaves, place on paper towel to dry Remove stems and cut chiles in half (for milder salsa you may remove the seeds and veins) Place onions, cilantro, garlic and chiles in food processor and pulse just until coarsely diced
  • Step 4
    Transfer diced onions. chiles, garlic and cilantro into bowl with fruit Pour honey mixture over fruit and vegetables Mix thoroughly with wooden spoon or rubber spatula, being careful not to bruise fruit May be chilled in fridge if not serving immediately
