This lightened-up version of a classic Southern spread is super yummy. We loved the creamy combination of the light mayo and Greek yogurt. The Greek yogurt adds a very slight tang. It's simple to make and after tasting it you'll never buy store-bought spread again. Great on a sandwich, on top of crackers or dipped into veggies.

Ingredients

  • 1 cup reduced fat cheddar, grated
  • 2 ounces Greek yogurt, non-fat
  • 2 tablespoons mayonnaise, light
  • 2 ounces pimentos, chopped (half the jar)
  • 1 pinch salt

How To Make skinny pimento cheese

  • Shredded cheese and pimentos in a bowl.
    Step 1
    Add ingredients to a bowl.
  • Ingredients mixed in a blue bowl.
    Step 2
    Gently fold all ingredients together. Don't mix it to death, it will ruin the texture of the cheese.
  • A bowl of pimento cheese with a sandwich in the background.
    Step 3
    Serve immediately. Keep leftovers refrigerated.
