quick touchdown chicken nachos

We all know people that will show up at the superbowl party, probably invited by one of your friends, so what to do? You weren't counting on 4 more people. You make this!! Voila!

Ingredients

  • 1-1/2 teaspoon minced garlic
  • 6 - green onions, chopped, green and white parts
  • 3 tablespoons oil, i used canola
  • 1 package dry taco seasoning mix
  • 1 - 10-12 oz can chuck chicken, drained and flaked
  • 1 cup favorite salsa
  • 1 bag thick tortilla chips
  • 8 ounces shredded mexican-style cheese
  • 1 large tomato, diced
  • 1 small can sliced black olives, drained
  • 8 ounces sour cream

How To Make quick touchdown chicken nachos

  • Step 1
    Place chicken, flaked, in a medium bowl and sprinkle with the taco seasoning mix, stirring it every few minutes for 10 mins.
  • Step 2
    Heat oven to 350. Place oil in lg skillet, over med heat. Add garlic and green onions. Save a handful of the green onions for topping. Stir in the chicken and then the salsa.
  • Step 3
    arrange tortilla chips on a lg baking sheet. Spoon chicken mix over chips. Top w/ cheese and tomato. Cook until cheese is melted, about 10 mins. remove from oven and sprinkle w/ remaining green onions, black olives and dollops of sour cream. Or you can serve sour cream in a ramekin on the side.
