For an easy supper and something different I like an "open-faced sandwich". When I was a teenager there was a great little restaurant on Circuit Ave., in Oak Bluffs, Ma. on the island of Martha's Vineyard that served this sort of food,it was called Frosty Cottage. They served ice cream,burgers and an assortment of take-out food.

Ingredients
- MAKE A WHITE SAUCE
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 1 1/4 cups grated cheese, either swiss or cheddar
- 1 small chopped green bell pepper,or choose your favorite for color
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt if desired; may not need it with cheese
- 1/2 cup boiled ham, sliced and diced
- 6 - english muffins, toasted lightly
- AFTER TOASTING MUFFINS PLACE ON COOKY SHEET, SPREAD WITH SAUCE

Step 1Most of the prep-time is chopping cheese,green peppers and ham; the sauce might take five minutes; and broiling time might be five minutes. Watch carefully, broil until cheese sauce is golden brown.
