party essentials: green chile cheese dip
I’m making a bunch of this dip for my clients, and I’m also making some for my Super Bowl party. It’s extremely simple to put together, and goes great with just about anything you want to dip in it. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 6 ounces sharp cheddar cheese, freshly grated
- 2 ounces pepper jack cheese, freshly grated
- 1/2 cup parmesan romano, freshly grated
- 5 ounces evaporated milk
- 1 teaspoon ground cumin
- 1 pinch cayenne pepper, or to taste
- 4 ounces 1 can, diced green chilies, thoroughly drained
- 1 teaspoon hot sauce, or to taste, i prefer franks

Step 1PREP/PREPARE

Step 2Gather your ingredients (mise en place).

Step 3Add the cheddar, pepper jack, and the evaporated milk to a saucepan over low heat.

Step 4Cook and stir until the cheeses melt into the milk, about 12 – 15 minutes.

Step 5Chef’s Note: Under no circumstances allow the cheese to come to a boil, or even a simmer.

Step 6Add the Parmesan Romano, and stir until incorporated.

Step 7Add the cumin, cayenne, green chilies, and hot sauce, and continue to stir until fully incorporated, about 2 minutes.

Step 8PLATE/PRESENT

Step 9Serve while hot with your favorite chips or veggies. Enjoy.
