Party Essentials: Green Chile Cheese Dip

I’m making a bunch of this dip for my clients, and I’m also making some for my Super Bowl party. It’s extremely simple to put together, and goes great with just about anything you want to dip in it.

So, you ready… Let’s get into the kitchen.

  • 6 oz
    sharp cheddar cheese, freshly grated
  • 2 oz
    pepper jack cheese, freshly grated
  • 1/2 c
    parmesan romano, freshly grated
  • 5 oz
    evaporated milk
  • 1 tsp
    ground cumin
  • 1 pinch
    cayenne pepper, or to taste
  • 4 oz
    1 can, diced green chilies, thoroughly drained
  • 1 tsp
    hot sauce, or to taste, i prefer franks

How to Make Party Essentials: Green Chile Cheese Dip


  2. Gather your ingredients (mise en place).
  3. Add the cheddar, pepper jack, and the evaporated milk to a saucepan over low heat.
  4. Cook and stir until the cheeses melt into the milk, about 12 – 15 minutes.
  5. Chef’s Note: Under no circumstances allow the cheese to come to a boil, or even a simmer.
  6. Add the Parmesan Romano, and stir until incorporated.
  7. Add the cumin, cayenne, green chilies, and hot sauce, and continue to stir until fully incorporated, about 2 minutes.
  9. Serve while hot with your favorite chips or veggies. Enjoy.
  10. Keep the faith, and keep cooking.
