miniature tomato sandwiches
I think this recipe may have come from a Southern Living magazine but I'm not positive. Wherever it can from, the sandwiches are easy to make and yummy. Perfect in the summer when visitors drop in. Serve with sweet ice tea or lemonade, a real keeper.

Ingredients
- 1 - french baquette
- 1 - 3 oz. cream cheese - softened
- 2 tablespoons fresh basil - chopped
- 1/4 cup mayo
- 1/4 teaspoon each - salt & pepper
- 4-5 - plum tomatoes - sliced,
How To Make miniature tomato sandwiches

Step 1Mix together mayonnaise, cream cheese, basis, 1/8 teaspoon salt & 1/8 teaspoon pepper.

Step 2Cover and refrigerate up to 8 hours.

Step 3Slice baquette into 16 slices.

Step 4Spread cheese mixture on 1 side of each baguette slice.

Step 5Top each slice evenly with tomatoes. How many slices depends on the size of the tomatoes.

Step 6Sprinkle each slice with remaining salt and pepper.
