miniature tomato sandwiches

I think this recipe may have come from a Southern Living magazine but I'm not positive. Wherever it can from, the sandwiches are easy to make and yummy. Perfect in the summer when visitors drop in. Serve with sweet ice tea or lemonade, a real keeper.

Ingredients For miniature tomato sandwiches

  • 1
    french baquette
  • 1
    3 oz. cream cheese - softened
  • 2 Tbsp
    fresh basil - chopped
  • 1/4 c
    mayo
  • 1/4 tsp
    each - salt & pepper
  • 4-5
    plum tomatoes - sliced,

How To Make miniature tomato sandwiches

  • 1
    Mix together mayonnaise, cream cheese, basis, 1/8 teaspoon salt & 1/8 teaspoon pepper.

    Cover and refrigerate up to 8 hours.

    Slice baquette into 16 slices.
  • 4
    Spread cheese mixture on 1 side of each baguette slice.

    Top each slice evenly with tomatoes. How many slices depends on the size of the tomatoes.

    Sprinkle each slice with remaining salt and pepper.
