black olives, sliced
1/4 c
pine nuts
1/4 c
sun-dried tomatoes, packed in oil, drained & finely chopped
3 clove
garlic, minced
1/4 c
fresh basil, chopped
1 medium
tube goat cheese
2 Tbsp
olive oil
1 tsp
fresh cracked black pepper
baguette slices

How to Make Mediterranean Dip


  • 1Toast pine nuts in a non-stick pan over low heat. Watch the pan carefully as the pine nuts burn easily. This should only take a minute or two.
  • 2In a bowl, combine olives, pine nuts, sun-dried tomatoes, garlic and basil. Add the goat cheese, mixing slightly. Don't over-mix. Pour olive oil over top and then add cracked black pepper.
  • 3Serve with baguette slices.
