liptauer käse (liptoi cheese spread)
My Polish uncle shared this recipe with my German mother, and it is considered an Austrian appetizer although the area known as Liptau is in Slovakia! Multi-national treat! I make it every year around the winter holidays - Christmas parties and gatherings, New Year's Eve feasts, etc. If you don't want to use beer, can substitute water, but beer is better and more authentic!

Ingredients
- 8 ounces low-fat cream cheese, softened
- 1/4 cup low-fat sour cream
- 2 ounces butter, softened
- 2 teaspoons anchovy paste
- 2 teaspoons capers (chopped if using large ones)
- 2 - green onions, chopped fine, include most of green
- 1/8 teaspoon salt
- 1 tablespoon paprika
- 2 tablespoons caraway seeds
- 1/2 teaspoon dry mustard
- 1-2 ounce beer (drink the rest!)
How To Make liptauer käse (liptoi cheese spread)

Step 1Put all ingredients in blender or food processor. I start with one ounce of beer and only add a bit more if it seems too dense. The consistency should be thicker than dip.

Step 2Use a cocktail knife to spread on small slices of rye bread. Saltines would work, but are not as traditional.
