I found this recipe many, many years ago in a Southern Living magazine and have used it every holiday season since. It's not just delicious, it looks like a holiday treat, too! Everyone loves this cheese ball!
1Combine first 8 ingredients in a large bowl. Mix well with hands.
2Shape into a large ball, or a few smaller balls.
3Place olive slices around the cheese ball and then roll the ball in pecan pieces and parsley. (The olive slices look like tiny wreaths all around the cheese ball, and the parsley gives it a nice, bright appearance). Wrap in wax paper or plastic wrap and refrigerate. Let it warm to room temp before serving.
Serve with assorted crackers (my favorite is sesame crackers). And I usually decorate the cheese platter with my recipe for Christmas Holly.
