Pumpernickle goes well with strong flavors (I think), so the "stinky cheeses" like gorgonzola and goat, taste great against the dark flavor of pumpernickle.

I used roasted red pepper hummus for this one and it tasted great...

    cocktail pumpernickle bread
  • 3 slice
    smoked ham
  • 3 slice
  • 3 slice
  • 3 Tbsp
  • 4
    fresh basil leaves
  • ·
    handful goat cheese crumbles
  • ·
    handful gorgonzola crumbles
  • ·
    handful red onion, sliced thin
  • ·
    handful fresh chopped dill
  • ·
    handful fresh chopped chives
  • ·
    pinch of salt

How to Make Gorgonzola Goat Cheese Minis


  1. Top 3 of the bread slices with the crumbled cheeses. Toast ALL slices in convection oven until bread is crispy and cheese is soft and warm.
  2. Roll basil up and cut into bits that will unroll into mini strips (basil chiffonade).
  3. Assemble: on top of cheesy slices, layer the basil, then the ham, tomato, cucumber, pinch of salt, red onion, chives and dill.
  4. Spread hummus on empty slices and top your lovely mini sandwiches. Enjoy.
