Pumpernickle goes well with strong flavors (I think), so the "stinky cheeses" like gorgonzola and goat, taste great against the dark flavor of pumpernickle. I used roasted red pepper hummus for this one and it tasted great...

Ingredients

  • 6 slices cocktail pumpernickle bread
  • 3 slices smoked ham
  • 3 slices tomato
  • 3 slices cucumber
  • 3 tablespoons hummus
  • 4 - fresh basil leaves
  • - handful goat cheese crumbles
  • - handful gorgonzola crumbles
  • - handful red onion, sliced thin
  • - handful fresh chopped dill
  • - handful fresh chopped chives
  • - pinch of salt

How To Make gorgonzola goat cheese minis

  • Step 1
    Top 3 of the bread slices with the crumbled cheeses. Toast ALL slices in convection oven until bread is crispy and cheese is soft and warm.
  • Step 2
    Roll basil up and cut into bits that will unroll into mini strips (basil chiffonade).
  • Step 3
    Assemble: on top of cheesy slices, layer the basil, then the ham, tomato, cucumber, pinch of salt, red onion, chives and dill.
  • Step 4
    Spread hummus on empty slices and top your lovely mini sandwiches. Enjoy.
