This recipe is taken from Taste of Home. Photo is from Taste of Home. A quick, easy, and fresh tasting bruschetta. Every crispy bite offers the savory taste of feta cheese, tomato, basil and garlic. We love ours cheesy so I have also been known to add a bit of Fontina cheese. It is still quite tasty w/out extra cheese. The other additions I made were the black olives and a bit of salt and pepper. Totally optional. This is best served warm right out of the oven.

Ingredients

  • 1/4 cup butter, melted
  • 1/4 cup olive oil
  • 10 slices french bread (1 inch thick slices)
  • 1 package (4 ounces) crumbled feta cheese
  • 2-3 cloves garlic, minced
  • 1 tablespoon minced fresh basil or 1 teaspoon dried basil
  • 1 large tomato, seeded and chopped
  • - black olives, chopped, to taste, optional
  • - sea salt and cracked black pepper, to taste, optional

How To Make feta bruschetta

  • Step 1
    Preheat oven to 350 degrees. Slice bread into 10 one inch thick pieces.
  • Step 2
    In a small bowl, combine melted butter and olive oil; brush on both sides of bread.
  • Step 3
    Place on a baking sheet. Bake @ 350 for 8-10 minutes or until lightly browned on top.
  • Step 4
    Combine the feta cheese, garlic and basil; sprinkle over toast. Top w/ tomato. Bake @ 350 for 8-10 minutes or until heated through. Serve warm right out of oven. Enjoy!
