Ingredients
- 5 ounces cream cheese, room temperature
- 4 ounces blue cheese, room temperature
- 1/2 cup dried cranberries
- 1/2 cup finely chopped pecans
- 4 tablespoons unsalted butter, room temperature
- 1 tablespoon honey
- - kosher salt and freshly ground black pepper
- 1 - english cucumber, sliced in half lengthwise, seeds scooped out with a spoon to create 2 boats
How To Make cucumber bite appetizers

Step 1Combine the cream cheese, blue cheese, cranberries, pecans, butter, honey and some salt and pepper in a stand mixer fitted with the paddle attachment. Mix until fully combined.

Step 2spread the filling into the cucumber "boats". Slice crosswise into 1-inch pieces.
