cordi's cheese ball
This is another one of my 'wing it' recipes. I wanted to make a cheese ball for Christmas dinner but had never made one before and I hadn't found a recipe that was quite 'me'. So I took whatever was in my kitchen and went for it... The result? The cheeseball disappeard and multiple requests for the recipe. ((Side note, I've found regular bell peppers give me heart-burn and gas and and the mini's do not. They are sweeter and much worth the search for them!))

Ingredients
- 1 package cream cheese or nuefetchel cheese, room temp
- 1/2 package real bacon bits
- 8 slices ham lunch meat
- 3 - mini sweet red/yellow bell peppers (mini's and regular sized are not the same!!!)
- 1 cup chopped fresh spinach
- 1 teaspoon worcestershire sauce
- 1-2 cup shredded cheddar cheese
How To Make cordi's cheese ball

Step 1Finely chop bell peppers, lunch meat and spinach.

Step 2Add cream cheese, cheddar cheese, and worc. sauce to a food processor/blender and pulse until combined.

Step 3Add bacon bits, bell peppers, ham, pulse to combined.

Step 4Transfer mixture to a bowl and work in spinach with your hands. Form into a ball. Roll in bacon bits and/or cheddar cheese if desired.
