brie encroute with pecans and fruit

I recently did a sammie with brie, pears and apricots and tried them with puff pastry and pecans, and it was a hit with my gang.

Ingredients

  • 1 - sheet puff pastry
  • 1 - round wheel bree
  • 1/2 - fresh ripe pear, or as i have used here fresh apple sliced
  • 2 tablespoons apricot preserves
  • 1 tablespoon chopped pecans
  • - dipping sauce
  • 1/4 cup sweet thai chili sauce
  • 1/4 cup apricot preserves or marmalade
  • 1 teaspoon siracha, more if you like more heat

How To Make brie encroute with pecans and fruit

  • Step 1
    Thaw the puff pastry and roll out a little thinner.
  • Step 2
    Cut the rind off the brie and set in the middle of the pastry
  • Step 3
    Spread half the preserves over the brie, cut the pear thinly and arrange over the preserves.
  • Step 4
    Spread rest of preserves over pears, sprinkle the pecans over the pears.
  • Step 5
    Fold the pastry over the brie, and bake in a preheated 400° oven for 20 minutes or until golden
  • Step 6
    Combine all dipping sauce ingredients and serve with the brie.
