These are insanely good. the cream cheese off sets the saltiness of the beef, and the gherkin adds an unexpected crunch. I make these all the time and the recipe was given to my by a very dear friend more than 30 years ago

Ingredients
- 4.50 ounces ( 2- 2.25 ounce) jar dried beef slices
- 8 ounces cream cheese, softened to room temp.
- 24 small sweet gherkins
How To Make beef and cream cheese roll ups

Step 1Spread each slice of beef with about 2 teaspoons cream cheese.

Step 2Put a sweet gherkin in the middle.

Step 3Roll up and slice crosswise.
