beef and cream cheese roll ups

These are insanely good. the cream cheese off sets the saltiness of the beef, and the gherkin adds an unexpected crunch. I make these all the time and the recipe was given to my by a very dear friend more than 30 years ago

Ingredients

  • 4.50 ounces ( 2- 2.25 ounce) jar dried beef slices
  • 8 ounces cream cheese, softened to room temp.
  • 24 small sweet gherkins

How To Make beef and cream cheese roll ups

  • Step 1
    Spread each slice of beef with about 2 teaspoons cream cheese.
  • Step 2
    Put a sweet gherkin in the middle.
  • Step 3
    Roll up and slice crosswise.
