appetizer essentials: yummy stuffed olives
I do a lot of appetizers… some uber fancy, like butter-sautéed crab in Pâte Brisée cups, but, when I make this one, it really gets gobbled up. The filling; along with the cream cheese, is a perfect compliment to the saltiness of the green olives, and the cayenne gives it just enough of a kick to make it unforgettable. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 12 large green olives, pitted
- THE FILLING
- 1/4 cup cream cheese, room temperature
- 2 teaspoons parmesan cheese, finely grated
- 2 ounces prosciutto, thinly sliced, and chopped
- 1 teaspoon hot sauce, i prefer frank’s
- 1 pinch cayenne pepper, or to taste

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Combine the filling ingredients, and check for proper seasoning.

Step 4Add to a pastry bag, or place into a Ziploc back, and cut off the corner.

Step 5Pipe into the olives, and then keep cool in the fridge until ready to serve.

Step 7Place on a plate, serve to your guests, and stand back. Enjoy.
