Appetizer Essentials: Yummy Stuffed Olives

I do a lot of appetizers… some uber fancy, like butter-sautéed crab in Pâte Brisée cups, but, when I make this one, it really gets gobbled up.

The filling; along with the cream cheese, is a perfect compliment to the saltiness of the green olives, and the cayenne gives it just enough of a kick to make it unforgettable.

So, you ready… Let’s get into the kitchen.

  • 12 large
    green olives, pitted

  • 1/4 c
    cream cheese, room temperature
  • 2 tsp
    parmesan cheese, finely grated
  • 2 oz
    prosciutto, thinly sliced, and chopped
  • 1 tsp
    hot sauce, i prefer frank’s
  • 1 pinch
    cayenne pepper, or to taste

  2. Gather your Ingredients (mise en place).
  3. Combine the filling ingredients, and check for proper seasoning.
  4. Add to a pastry bag, or place into a Ziploc back, and cut off the corner.
  5. Pipe into the olives, and then keep cool in the fridge until ready to serve.
  7. Place on a plate, serve to your guests, and stand back. Enjoy.
  8. Keep the faith, and keep cooking.
