What is more heartening than a nice yummy grilled-cheese sandwich, and then dipping that sandwich into some homemade tomato soup. That, to me, is the quintessential comfort food.
Why not miniaturize the lot, and make them an appetizer?
These are insanely easy to make, and the presentation is brilliant.
So, you ready… Let’s get into the kitchen.

sweet butter, salted, melted
bread, i prefer sourough
sharp cheddar, shredded
mild colby, shredded
tomato soup, your favorite
How To Make
Gather your Ingredients (mise en place).
Warm up your tomato soup, and reserve.
Brush the melted butter on one side of each of the two slices of bread.
Add one slice of bread, butter-side down, to a skillet over medium heat.
Mix the two cheeses together, and spread over the top of the bread slice.
Place the second slice of bread, butter-side up, on the cheese.
Chef’s Note: Cook until the bottom slice begins to brown, and the cheese gets melty, about 2 – 3 minutes.
Flip, and cook for an additional 2 – 3 minutes.
Chef’s Tip: For me, cooking the ultimate grilled cheese is not about two flips, I might flip it several times, until I achieve the exact level of browning that I want.
Remove from the pan, and carefully cut into strips.
Chef’s Tip: The strips need to be thin enough to dip into the tomato soup.
If you are in the market for a good tomato soup, here are two suggestions:
Pour the soup into a tall shot glass.
Lay two of the grilled-cheese strips on the side and serve. Enjoy.
