appetizer essentials: feta, cream cheese honey dip

Just came up with a new dip for Sunday brunch. It is simple to assemble, and goes good with chips, and/or pita bread, or whatever you choose to dip into it. Recipes like this one typically use a diced tomato or two in the mix. I decided to roast some grape tomatoes, and pile them on top of the dip. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • THE FETA CREAM CHEESE DIP
  • 6 ounces feta cheese, crumbled
  • 4 ounces cream cheese
  • 1/4 cup olive oil, extra virgin
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 teaspoons fresh clover honey
  • 1 teaspoon lemon zest
  • THE BAKED TOMATOES
  • 10 ounces grape tomatoes, 1 standard container
  • 2 tablespoons olive oil, extra virgin
  • - salt, kosher variety, to taste
  • - black pepper, freshly ground, to taste
  • OPTIONAL ITEMS
  • - a clove or two of baked garlic
  • - fresh oregano, chopped
  • - fresh basil, as a topping
  • - a drizzle of balsamic glaze
  • - a drizzle of honey

How To Make appetizer essentials: feta, cream cheese honey dip

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients (mise en place).
  • Step 3
    THE FETA CREAM CHEESE DIP
  • Step 4
    Place all the ingredients into a blender, or small prep bowl, fitted with an S-blade.
  • Step 5
    Blend until all the ingredients are incorporated and smooth, then reserve.

    THE BAKED TOMATOES
  • Step 7
    Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Step 8
    Slice the grape tomatoes in half, then toss with the olive oil, and a bit of salt and pepper.

    Place on a parchment-lined baking sheet and roast until softened and beginning to brown, about 30 – 35 minutes.

    Place the feta dip on a plate, and then top with the baked tomatoes.

    Chef’s Note: Add a drizzle of balsamic glaze, and honey (optional)
